Hi Mildred & friends, what did you or are you having for dinner? I'm getting ready to cook edamame spaghetti noodles (will be the 1st time I've tried them, lower carbs, higher protein, fiber & iron) with some (previously frozen) meatballs in spaghetti sauce & top with some parm cheese and a side of green beans and maybe a side salad.

Seasoned burger patty (no bun) with a kale salad. Special treat: I found frozen sweet peas in the freezer. Thawed and added a few to my salad along with a few grape tomatoes.

LizzyB how was it? I use magic noodles, made of yam. Very low carb. I cook the noodles first and take all the water out, push the water out. Then add the sauce.

ClearColors You know the edamame noodles were good to me. They do seem high in calories though I think? It's 200 calories for 2oz and I weigh my food out now & 2oz is nothing. Maybe regular spaghetti is that high in calories too, I don't know, I never paid attention before. Anyhow though, I was aiming for healthier & some more nutrition so that goal was...

LizzyB and ClearColors Have either of you tried kelp noodles? I stumbled across the idea last night and ordered some. Kelp is supposed to be a superfood high in the trace minerals and antioxidants and also low carb. Reading the description of how to prepare them though I'm a little worried they'll be a texture I'm not fond of. I tried the Shiritaki noodles and just didn't care for them. Laura S I haven't had kelp noodles. Good for you trying different noodles. Thanks for the heads up about different noodles. Occasionally I have kelp as a snack. Zucchini sounds great. I do Shiritaki noodles rinsing, cooking and really pushing out water first. Then I may soak in a sauce, letting them sit in the sauce for a long while.
